Muffin Mix Pancakes
Did you know that you can turn your muffin mixes into pancakes? Because of this, you can make Blueberry, chocolate chip, strawberry cheesecake, or mixed berry pancakes (and probably more) super easy.
I don’t always have fresh fruit on me. I love it, but it just goes bad so fast. So, it’s hard for me to make fresh blueberry pancakes without having to run to the store.
We love buying muffin mixes. I love muffins. I love homemade muffins more, but for a quick fix, $1.00 muffin mixes are quick and easy. (They are a lot better fresh, so just gobble them all up same day, which shouldn’t be a problem.)
Well, if you’re craving pancakes and have muffin mixes on hand, you can do this recipe. We buy Martha White muffin mixes, so I’ve only tried this recipe with those. I lied, I also have used the Betty Crocker brand, which works too.
Muffin Mix Pancake Recipe
Ingredients:
1 Package of Muffin Mix (We use Martha White, any flavor)
2/3 c. Milk
1 Egg
Instructions:
Combined all ingredients and mix until well combined and smooth.
(Excuse my son’s tattooed arm! haha.)
Pour about 1/3 c. of the batter onto a hot griddle set at 325-375 degrees.
Once the top side of batter starts bubbling, flip and cook the other side until it’s cooked all the way through. These pancakes cook really fast. They do come out thin, but they are so flavorful and EASY!
Top with peanut butter, Nutella, or butter with syrup. YUMMY!
